MAPE is the scorecard for a forecast. It answers one question — on an average day, by what percentage was the prediction wrong — and it is the only honest way to compare an AI forecast against the head chef's intuition. A 40% MAPE means a station preparing 100 portions was routinely 40 portions out, in either direction: waste on one side, stockouts and walked customers on the other.
Three details decide whether a MAPE number means anything. It must be computed per outlet and per daypart, because a chain-level daily figure hides the lunch overshoot that the dinner undershoot cancels out. It must be weighted by volume, or a single quiet Tuesday item distorts the average. And it must be measured on held-out days the model never trained on. Worked example
Monday lunch at outlet #2: forecast 180 bowls, actual 210 → error 14.3%. Tuesday: forecast 195, actual 172 → 13.4%. Wednesday: forecast 188, actual 190 → 1.1%.
Three-day MAPE = 9.6%. At 9.6% a kitchen can prep to forecast and hold a 10% buffer; at 40% it must either over-prep or accept stockouts, and both cost roughly 1.5–3 points of food-cost margin.
